Thai Turkey Meatballs With Coconut Curry Sauce

Thai meatballs are flavor bombs you didn’t know you needed in your life.

In all seriousness, these balls changed my life — they are flavorful but also feel light at the same time. Paired with this rich coconut curry sauce, your guests will be giving you a five-star review.

Ingredients 

Meatballs

  • 2 tablespoons of vegetable oil

  • 1 lb ground turkey

  • 20 basil leaves (sliced)

  • 4 garlic cloves (minced)

  • 2 scallions (sliced)

  • 2 tablespoons of fish sauce

  • 1 tablespoon of brown sugar

  • 1 tablespoon of cornstarch

  • 1 teaspoon red curry paste

  • ¼ teaspoon of salt

  • Squirt of a lime slice

  • 1 egg

Curry Sauce

  • 1 tablespoon butter

  • 3 garlic cloves (minced)

  • 1 tablespoon of ginger (minced)

  • 1 shallot

  • 4 tablespoons of red curry paste

  • 1 ½ tablespoons of fish sauce

  • 1 tablespoon of brown sugar

  • ¾ lime (juice)

  • 2 cans of unsweetened coconut milk

  • 8 oz of chicken stock

Garnish

  • Cilantro

  • Squirt of lime

Serve With

  • Udon noods

  • Naan

Preparation

Meatballs

Grab a medium sized bowl and mix all meatball ingredients (except oil) together until fully incorporated. Heat oil in a large wok on medium heat. Use a tablespoon to form meatballs and place them into the wok. Brown the meatballs in batches of 6 on two sides, but do not cook all the way through (about 3 minutes on each side). Place meatballs on a plate and set aside.

Curry Sauce

After you finish the browning of the meatballs, heat butter over medium high heat in the wok. Add the garlic, ginger, and shallot, sautéing 1 minute until fragrant. Add red curry paste, sautéing for 2 minutes. Add fish sauce, brown sugar, lime juice, coconut milk, and stock. Bring to a simmer and add meatballs. Reduce heat and lightly simmer for 25 - 30 minutes.

While your meatballs are simmering, cook your udon noodles!

Serve

This dish can be a little messy when serving, so I will make my guest’s bowls for them. Grab a bowl, place your udon noodles in first, followed by the turkey meatballs and curry sauce. Garnish with cilantro and a squirt of lime. Serve with naan.
