Broccolini Sammie Time

Let’s say it together: Sandwich. Of. The. Summer.

Yes, you’ve read that right, this sandwich is my favorite dinner sandwich. It is thick, tangy, and cheesy (just the way I like my — ) and don’t even get me started on the smear. It takes this sandwich to the next level — and this smear isn’t just great on this sandwich, it works well with every and anything. Okay enough talking — let's get into it!

Serves: 4

Ingredients

Smear

  • 2 large carrots (peeled and sliced)

  • 2 bell peppers (sliced — I always go for red)

  • 1 shallot (sliced)

  • 1 tsp red pepper flakes

  • ½ olive oil

  • 3 tbsp of balsamic vinegar 

  • salt

Sammie

  • 4 bunches of broccolini 

  • 1 cup of sliced portobello mushrooms

  • 3 garlic cloves (thinly sliced)

  • 3 tsp. olive oil

  • salt

  • 2 tbsp of lemon juice

  • brie cheese

  • 3 oz prosciutto (optional)

  • Squirt of lemon

  • 4 Ciabatta rolls (or whatever bread your heart desires) 

Preparation

Smear

Preheat your oven to 425. Toss carrots, bell peppers, shallot, and 3 tsp. olive oil on a rimmed baking sheet. Roast on the upper rack for 25 - 30 minutes. Toss occasionally until vegetables are tender — it's best if there is a little charring.  

Sammie

While your smear is roasting, separate the broccolini florets from the stalks and thinly slice the stalks — they are heartier than the tops so slicing them thin so they cook properly is key here! Put all of your broccolini (florets and stems) in a rimmed baking pan, I tend to go with my big glass baking dishes but you do you! Add your mushrooms, garlic, and 3 tbsp olive oil to the broccolini and season with salt. Roast on the middle rack for 20 minutes. Toss after 10 minutes and add your 2 tbsp of lemon juice.

Back to the Smear

Transfer carrot and bell pepper mixture to a food processor. Add balsamic vinegar and ¼ cup of olive oil. Blend until smooth. Add the rest of the olive oil, blend until it is emulsified and season it with salt.

Building Your Sandwich 

Slice your bread — if you went with a roll, slice it lengthwise. Arrange the cut side up on a rimmed baking sheet. Put your smear on both halves of the bread. Slice your brie and place 4 slices of brie on bottom halves followed by a slice of prosciutto. Pile the broccolini mushroom mix on top of the prosciutto. Add more brie slices on top of the broccolini pile. Toast sandwiches open faced until cheese is melted — about 2 minutes. A squirt lemon on the sandwiches. Close and cut crosswise.
